Portuguese Goan Style Salmon

Salmon in curry sauce

INGREDIENTS
• 2 tbsp. vegetable oil
• 1 tsp. mustard seed
• 1 tsp. fenugreek seed
• 1/2 red onion finely chopped
• 3 cloves garlic finely chopped
• 1 tbsp. ginger finely chopped
• 1 tsp. tumeric
• 1 tsp. corriander powder
• 2 tsp cayenne pepper
• Pinch of salt
• 3 roma tomatoes finely chopped
• 3 kokum pods
• 1 cup water
• 4 curry leaves
• 1/2 cup coconut milk
• 1 large salmon filet

STEPS
1. Soak kokum pods in water for 10 minutes.
2. Set pan on medium high heat. Add vegetable oil. Add mustard and fenugreek seeds.
3. When seeds start to pop add red onion. When onions turn transluscent add garlic and ginger.
4. Once ingredient start to brown add all dry spices. After a minute add chopped tomatoes.
5. Thoroughly combine mixutre then add 1/2 cup water used to soak kokum pods. Bring to simmer.
6. Add curry leaves then coconut milk.
7. Reduce the flame /add salmon and let simmer for three minutes.
8. Flip fish and finish for another three minutes.
