West Coast Style: Cedar Plank Salmon

Cedar Plank Salmon

Ingredients:
• BC Farm Salmon fillets - 3 to 4 medium size
• Fresh dill chopped - 1 teaspoon
• Shallots diced - 2 medium size
• Garlic minced - 1 teaspoon
• Lemon Juice - 1 tablespoon
• Black pepper - half teaspoon
• Olive oil - 1 tablespoon
• Green onions - 2 lengths chopped

STEPS
1. Soak cedar plank overnight in water (this keeps plank from setting alight during grilling)
2. Combine dill, shallots, garlic, lemon juice, pepper, olive oil, and onions in bowl and mix together.
3. Coat top of salmon with mix.
4. Sprinkle salt and pepper to taste on plank. Place salmon fillets on plank skin side down.
5. Place plank on grill and cover (this enhances aroma in dish)

Cook for 10 to 15 minutes depending on heat of grill. Salmon will be ready when it feels firm. Cedar plank will crackle during grilling.

NOTE: Be sure to soak cedar overnight for 24 hours otherwise plank may set alight, so keep water spray bottle nearby in case.
