Steam Garlic Salmon with Tofu

INGREDIENTS
• Salmon: 500 grams
• Tofu: 2 large squares
• Fresh garlic - 2 bulbs (about 24 cloves)
• Green onion - 3 to 4 pieces
• Salt - 1/2 teaspoon
• Sugar - 1/2 teaspoon
• Vegetable oil

STEPS
1. Chop/ dice garlic and place in a heat resistant bowl. Add salt and sugar. Add vegetable oil to wok and heat. Ladle two scoops of oil out of wok (once oil is hot) and pour into heat resistant bowl, let garlic cook while stirring. Put this mixture aside, let cool.
2. Slice tofu into 1/2 inch thick rectangular slabs, place in steamer dish. Place slices of salmon on top of tofu. Add chopped garlic mix from the bowl and spread over the salmon, keep some garlic mix aside for end.
3. Steam salmon for 8 to 10 minutes depending on your steamer intensity.
4. Add the remainder of your garlic mix to heated wok, fry until golden yellow and spread over finished salmon.
5. Top with chopped green onion.
