Maria Huynh recently opened Satori Factory on Victoria Drive in December 2012.
The establishment offers comfort food with vegan or gluten free options to stay or to go and for special events.
Maria was born in Canada but her family roots go back to Central Saigon and the Mekong Delta in Vietnam. Her family left the country in the late seventies to escape war.
They ended up in an Indonesian refugee camp where even there, her mother somehow managed to open up a Café Chau.
Her parents eventually found their home in Vancouver, Canada in the mid 1980’s and pioneered a series of pocket businesses including a Vietnamese deli and a noodle shop.
All these starter businesses were successfully sold and still exist today.
Sartori Factory is a creative fusion of both Asian and French traditions. It is country style with its handcrafted white oak distressed wood countertops and it is Asian fusion for the delightful, anything but typical, treats and beverages.
There is also a bit of an industrial look to the metal ornate chairs softened by coffee bag pillow covers.
Glass jar lamps dangle above large wooden table where coffee and artisan tea lovers can sit together and mingle.
 The cafe's signature Rose Latte is made with sugar cane infused roses, it could only be described as heaven.
Customers should make a note to come back and sample the lemon grass chicken panini, or the slow grazed beef stew, and end it all with a slice of tiramisu cheesecake.
